ABOUT Penne Pasta in Avocado Chutney Sauce RECIPE

This 10 minute scrumptious and filling mini meal packed with the goodness of avocado and extra virgin olive oil and sprinkled with cheese, is a hit with kids!

Ingredients Serving: 4

  1. 12 oz box of regular or gluten free pasta
  2. For the chutney sauce-
  3. ½ ripe avocado
  4. 1 small clove of garlic
  5. ½ small greenchili pepper (or to taste)
  6. A handful of cilantro leaves
  7. 1 ½ teaspoons sugar
  8. Juice of 1 small lime
  9. 1 Cup water
  10. Salt to taste
  11. 1/8 cup extra virgin olive oil
  12. grated parmesan cheese

Instructions

  1. Boil the penne pasta according to the instructions on the box. Mine took 10 minutes to cook.
  2. Meanwhile, in a blender, combine all ingredients for the chutney sauce and blend together. Drizzle in the extra virgin olive oil and keep running the blender until it is well incorporated in the sauce.
  3. Drain the cooked pasta, the sauce and top with grated Parmesan cheese. Serve!
