Ingredients Serving: 4

  1. Sarso ki bhaji-500 gms
  2. Spinach or Palak-250 gms
  3. Bathua-250 gms
  4. Maize flour-2 tbsp
  5. Garlic-5-6 pods or can add 50 gms of green garlic which is readily available in winters
  6. Ginger-2inch
  7. Onion-2
  8. Tomato-1 medium
  9. Green chillies-acc to taste
  10. Dry spices like turmeric powder,coriander powder,cumin powder,salt
  11. Mustard oil-2 tbsp
  12. For roti:
  13. Maize flour-250 gms
  14. Ajwain-1tsp
  15. Salt-acc to taste

Instructions

  1. Sort out all the leafy greens and wash thoroughly in running water.
  2. Chop all three bhajis and put in a cooker.Add green chilli and ginger also.Add about half cup of water.
  3. Cook for 1 whistle in cooker.
  4. Take a pan and roast 2 tbsp maize flour and keep in bowl.Then add mustard oil and add cumin seeds and asafoetida.Add chopped onions,fry for 2 minutes,add garlic and when the onions are cooked add tomatoes which are finely chopped.
  5. Add all dry masalas like turmeric,red chilli powder,cumin powder and coriander powder.
  6. Mash the cooked bhajis and add roasted flour to this mix and mix properly. Add to the pan and mix everything properly.
  7. Add about half cup water if the bhaji seems very thick and close the pan and let it simmer for 10 minutes.Lastly add 1 tsp lemon juice. Saag is ready. MAKKI KI ROTI Take maize flour ,ajwain and salt in a bowl.Add warm water and knead soft flour. Roll rotis by taking a ball and keeping between a polythene sheet or by hand.
  8. Put it on tawa.when some brown spots appear turn and cook the other side.Apply ghee on upper side and turn and roast till it is cooked crisp and brown.
  9. Serve hot with sarso ka saag and butter.
