The festive season is on, and it’s time for fun, cheer and sweet treats to savour, thus I baked some cookies. As a child, I used to wonder how delicious cookies were made. And now am trying to solve this mystery by baking some cookies. During this festive season, I decided to bake some cookies yesterday and made these ‘yellow hued tutti-frutti’ cookies. Thanks to Sailu, for sharing the recipe on her blog: Sailusfood. Yesterday, on Christmas day, after baking these cookies, I visited some of my friends and wished them. It was wonderful to see the beautifully decorated Christmas trees and cribs in their houses. There are some ingredients which are always available in our larder. Maida, all purpose flour and custard powder are two such items. Here is a simple recipe which can be made in a few minutes. These goodies are best savored when warm. So get going, bake them and relish these treats with a cup of hot tea!

Ingredients Serving: 6

  1. 2 cups All Purpose Flour (Maida)
  2. 1 Cup Vegetable oil
  3. 1 cup powdered sugar
  4. 1/2 cup custard powder
  5. 3/4 tsp baking powder
  6. 1 big pinch of baking soda
  7. 1 tsp vanilla essence
  8. tutti frutti for garnishing

Instructions

  1. Sieve maida, baking powder, baking soda and custard powder. Mix together, sugar and oil well. Add the sieved ingredients to this sugar-oil mixture.
  2. Add vanilla essence and mix well to form a dough. If the dough does not become stiff enough to roll into balls, add a few teaspoon of cold milk or water and chill for a few minutes.
  3. Take small bits of dough and shape into balls. Slightly flatten these balls. Garnish with tutti frutti, by slightly pressing into the dough.
  4. Place these on a greased tray and bake at 180 C for about 10 -12 minutes or until done.
  5. Once baked, the cookie will feel soft on touch but once cool it will harden. If you over bake beyond the mentioned time limit, you will have a very crunchy cookie.
