ABOUT Lemon Custard Pistachio Cookies RECIPE

Lemon flavoured cookies are crunchy ,soft and melt in the mouth.

Ingredients Serving: 10

  1. 1cup maida (or, whole wheat flour)
  2. 1/2 cup besan
  3. 1 tbsp Custard powder
  4. 1/2 cup Sugar
  5. 1 tbsp lemon extract
  6. 1/2 tsp baking powder
  7. 1/4 tsp Baking Soda
  8. 1/2 cup homemade butter
  9. 1/4 tsp crushed cardamom powder
  10. Some chopped pistachio

Instructions

  1. Take a bowl and sieve maida , besan, baking powder,and baking soda
  2. Add sugar and cardamom powder
  3. Mix1/2 cup melted ghee/butter (I used homemade fresh melted butter)
  4. Add lemon extract
  5. Make a smooth dough. if needed, can add less milk for making dough
  6. Addition of milk depends on the consistency of the dough. Sometimes you will need more than 1 tbsp of milk. Sometimes you need less.
  7. Roll out dough on chopped pistachios
  8. Fold it in a butter paper or a foil
  9. Keep it in refrigerator for 20-30 minutes.
  10. After freezing, cut into pieces
  11. Bake it in a preheated oven at 170 degrees C for 10 to 15 minutes or till golden in colour
  12. the cookies may look soft when you take them from oven and will harden as they cool
