Loaded with all dried fruits and dry fruits, an eggless version of Christmas cake

Ingredients Serving: 8

  1. 1 cup Dried fruits( cherries, cranberries, raisins, black currants, figs, apricots)
  2. 1/4 cup chopped almonds and cashewnuts
  3. 1 cup Orange juice
  4. 1 1/4 cup flour
  5. 3/4 cup brown sugar
  6. 1/2 cup malai
  7. 1/2 cup yogurt
  8. 1 tsp Baking powder
  9. 1/2 tsp baking soda
  10. 1/4 tsp cinnamon powder
  11. 1/8 tsp ginger powder
  12. 1/8 tsp nutmeg powder
  13. 1 tsp orange zest

Instructions

  1. Soak the dried fruits in orange juice, preferably overnight. I gave a boil and soaked for a couple of hours only.
  2. Drain and keep the dried fruits 15 mins before baking. After draining, mix 1/4 cup flour with the fruits and keep aside.
  3. Sift together flour, baking soda and powder and all dry spices powder and keep aside
  4. In a mixing bowl, add malai and sugar and beat till creamy. Add yogurt, leftover orange juice from draining the fruits.
  5. Add the flour in batches and mix well.
  6. Add in the flour coated dried fruits and orange zest.
  7. Put in a greased pan, and bake at 180 degree C in a preheated oven for 40-45 mins till a skewer comes out clean.
  8. Let cool, demould and sprinkle with powdered sugar. And enjoy a yummy Christmas fruit cake.
