Ingredients Serving: 10

  1. 2 liter full fat milk
  2. 175 gm sugar
  3. 1/2 tsp alum ( phitkati )
  4. 2 tsp cornflour
  5. 3 sheet silver foil
  6. 1/8 tsp rose pink color
  7. For strawberry Kalakand -
  8. 1 cup chopped strawberry
  9. 1/4 cup sugar
  10. Few drop strawberry essence

Instructions

  1. Take deep heavy vessel and pour 2 liter. milk in the vessels. Put the vessels on the stove and let the milk boil till 30 minutes.
  2. Add alum to the boiling milk. Alum will form a layer of cream/ malai on top so when you see the cream floating on top, gently stir the cream layer and keep boiling till the quantity of milk reduces
  3. Keep stirring milk continuously. The consistency of the milk will become extremely thick and grainy in texture.
  4. Once the milk reduces to half, add sugar. You can add sugar as per your taste and stir for a few minutes .
  5. Now take a small bow, add cornflour and water mix well now add cornflour in this mixture again stir few minute cook till the mixture turns lumpy.
  6. In another Pan, take mashed strawberry and add sugar and cook till strawberry become soft and add when milk fully reduces. otherwise the milk will curdle.
  7. Add food color (optional) and cardamom powder to taste. Add essence
  8. Spread it on a greased plate, allow to cool and sprinkle chopped nuts.Once set, cut it into square pieces and serve.
