ABOUT Cajun Potatoes RECIPE

Deep Fried Crispy potatoes topped with creamy cajun sauce, which is a perfect blend of spicy, pungent and earthy flavours

Ingredients Serving: 3

  1. 12-15 baby potatoes ( 200 gm)
  2. 1 tsp pepper powder
  3. Salt to taste
  4. 1 tbsp cornflour
  5. For the sauce -
  6. 1 cup mayonnaise
  7. 1 tsp cayenne pepper powder / paprika
  8. 1 tsp lime juice
  9. 1/2 onion finely chopped
  10. 2 tbsp Coriander leaves finely chopped
  11. 3 tbsp ketchup
  12. 1 tsp oregano powder
  13. 1 tsp garlic powder
  14. A dash of vinegar

Instructions

  1. Parboil potatoes with skin. Mash them a bit using your palm.
  2. Add cornflour , salt and pepper powder and then mix all together .
  3. Fry the potatoes till brown and crisp. Take it out on a serving plate .
  4. In a bowl add Mayo and rest all other ingredients to make the Cajun sauce , mix well.
  5. Pour it over the roasted potatoes.
  6. Garnish with fresh coriander.
