ABOUT Veggie Delight - An easy Vegetable Medley RECIPE

Presenting a quick and easy dish to go along with rotis or even ghee rice, with a boiled egg, may be. A heart full of healthy veggies, for a healthy heart :) Chopped broccoli, mushrooms, garlic and capsicum stir fried and seasoned in butter. This stir fry is as simple as it could be, yet scrumptious and nutritive.

Ingredients Serving: 2

  1. Broccoli florets 3/4 cup
  2. Mushroom 3/4 cup (sliced)
  3. Onion (diced) 1
  4. Green chilli (chopped) 2
  5. Garlic (sliced) 5 pods
  6. Butter 1/4 cup
  7. Carrot (sliced) 1
  8. Red capsicum (sliced) 1/2
  9. Yellow capsicum (sliced) 1/2
  10. Spring onions 2 (chopped)
  11. Soya sauce 2 tbsp (optional)
  12. Salt as required
  13. Pepper powder 1/4 tsp

Instructions

  1. Blanch the sliced broccoli with little salt for about 3 minutes.
  2. Similarly, blanch the cleaned mushrooms too in water with little salt for 2 minutes.
  3. Drain the water and keep them aside.
  4. Melt butter in a pan.
  5. Add in the sliced garlic and saute for a minute.
  6. Add the onion too and saute until they turn soft and pink.
  7. Next add in the blanched broccoli and mushroom.
  8. Add the carrots too.
  9. Add salt and green chilis and mix.
  10. Let it to fry for around 5 minutes, uncovered, and stirring in between.
  11. Next add the sliced capsicum and chopped spring onions. Mix well.
  12. Saute for a minute or two.
  13. Add in the pepper powder and mix.
  14. Turn the heat off.
  15. Serve hot with a dash of soya sauce as garnish.
