Ingredients Serving: 4

  1. Gooseberry - 1 1/2 cup
  2. jaggery - 1 cup
  3. Honey - 1 cup
  4. ghee - 5-6 tbsp
  5. Almonds - 1/2 cup
  6. spices - green cardamom - 6 pieces Peppercorns -1 1/2 tsp , cinnamon - 1 inch Cumin seeds -1 tbsp , fennel seeds - 2 tbsp
  7. Saffron - 1/2 tsp ( instead of these spices you can also add the ready spices from the market )
  8. Silver and gold varak.

Instructions

  1. Wash and clean the gooseberry and let it dry on the kitchen towel. Make sure they are completely dry for a better shelf life.
  2. Now in a pressure cooker keep a strainer and add the gooseberry and cook for 2 whistles.
  3. Take all the spices and grind them to a powder. Grind the almonds separately to a powder.
  4. Once the gooseberries are cooked let them cool and de-seed them. Mash the gooseberries
  5. Take a nonstick pan and heat the ghee in it. Add mashed gooseberry and mix it till the ghee leaves the sides of the pan.
  6. Add the jaggery and honey into this and let it cook for about 4-5 min.
  7. Then add the ground dry spice mixture and the almond powder and let it cook till the contents get a bit sticky and come off the sides of the pan. Add the silver and gold varak.
  8. Cool it and store the chawanprash in a clean and dry air tight container.
