Ingredients Serving: 8

  1. All purpose flour 500gms
  2. Salt 1 tsp
  3. Carrom seeds 1/2 tsp
  4. Baking soda 1/4 tsp
  5. Desi ghee 1/2 cup
  6. Spinach 150 gm
  7. Ginger juice 1 tbsp
  8. Green chilli 3
  9. Water to knead the dough
  10. Oil for Deep frying
  11. Chat masala to sprinkle

Instructions

  1. Wash spinach. Transfer to a grinder with ginger juice and chillies. Puree the mixture.
  2. Take all purpose flour. Add salt, carrom seeds, baking soda and ghee. Mix well with your fingers.
  3. Add spinach puree to flour and mix well.
  4. Knead the stiff dough using water as required. Keep the dough to rest for half an hour.
  5. After half an hour punch the dough again. Pinch a big ball from the dough ( around 1/4th of the dough)
  6. Roll it into a big thin chapati.
  7. Poke with a fruit fork all over.
  8. Cut small round discs using a round cutter.
  9. Remove the sides
  10. Meanwhile, heat oil in a wok. Check the oil heat by dropping a small ball of dough into the oil. If it rises up instantly without changing colour, the oil is ready.
  11. Slip rolled discs in oil. Set the flame on medium to low. You can go with a large batch at a time as we have to cook on low heat so as to cook deep inside.
  12. When done, remove to a paper towel and sprinkle some chat masala over them.
  13. Make mathris in the same manner from the remaining dough. When cool, store in an air- tight container.
