Usually makai flour parathas are made by merging veggies in the dough. But we make it stuffed like regular wheat flour paratha. Parathas with crunch outside and soft inside are very filling and appropriate for sunday brunch.

Ingredients Serving: 2

  1. Makai flour 1 cup
  2. Salt 1/4 tesp
  3. Luke warm water to knead the dough
  4. Boiled potatoes 2
  5. Salt to taste
  6. Red chilli powder 1/4 tesp
  7. Cumin seed 1/4 tesp
  8. Green coriander 1 tbsp
  9. Green chillies 2
  10. Oil to fry paratha

Instructions

  1. Knead makai flour with 1/4 tesp of salt into a soft dough using luke warm water. Let it rest for 10 minutes.
  2. Prepare filling-Mash boiled potatoes. Mix in salt, red chilli powder, cumin seeds, chopped coriander, chopped green chilies.
  3. Pinch a ball from the dough . ( Little bigger than we use for regular paratha).Flatten it on your left palm with the fingers of right hand.
  4. Put a portion of stuffing in centre ( stuffing portion should be equal to the size of dough you are using for one paratha).Cover the stuffing with dough ( same as you do for stuffing bread rolls)
  5. Now take a plastic sheet. Grease it well with oil. Put your stuffed ball on it. Now spread it to a roti using your fingers. Apply some oil on your fingers too to avoid sticking.( You can use your way of rolling makai roti)
  6. Now carefully flip rolled roti onto your right palm by lifting plastic sheet with your left hand. Quickly flip the roti onto hot griddle. You have to be really quick else roti will break.
  7. Now flip and let it cook this side too. Put 1 tbsp oil ( makai paratha takes more oil than regular paratha) and flip to cook nice golden colour both side by applying oil both sides. Serve this crunchy yummilicious paratha with any raita of your choice.
