ABOUT Quinoa Salad in a Red Wine Dressing RECIPE

Ingredients Serving: 2

  1. Quinoa 1 cup, soaked in water overnight and drained
  2. Lemon zest 1 tbsp
  3. Lemon juice 4 tbsp or of 1 lemon
  4. Sea salt ½ tsp
  5. Black pepper to taste, freshly ground
  6. Corn 3 ears, cooked, kernels cut out of cob
  7. Scallions 3, thinly sliced, white and light-green part
  8. Red bell pepper 1 no. diced
  9. Yellow peppers 1 diced
  10. Cilantro ¼ cup, chopped
  11. Feta (optional)
  12. Pinenuts (optional)
  13. Red Wine Vinaigrette Dressing:
  14. Red wine vinegar ¼ cup
  15. Onions sliced 1
  16. Olive oil ½ cup, extra virgin
  17. Rind of lemon 1
  18. Juice of lemon 2
  19. Brown sugar 2-3 tbsp
  20. Garlic 1 tbsp
  21. Cumin powder, roasted 1 tsp
  22. Salt & Pepper to taste

Instructions

  1. For the dressing mix all the ingredients together and bring to a boil. After cooling can be refrigerate.
  2. Bring large pot of salted water to boil. Add quinoa, cover and cook on medium heat until white dot of uncooked starch in centre is gone 11-14mins. Drain and spread on a large plate to cool.
  3. While quinoa is cooking, whisk together dressing of lemon zest and juice, butter, honey, salt and pepper in a bowl. Until combined.
  4. Put quinoa in a bowl with corn, scallions, pepper and cilantro and toss with dressing before serving.
