Ingredients Serving: 2
Quinoa 1 cup, soaked in water overnight and drained
Lemon zest 1 tbsp
Lemon juice 4 tbsp or of 1 lemon
Sea salt ½ tsp
Black pepper to taste, freshly ground
Corn 3 ears, cooked, kernels cut out of cob
Scallions 3, thinly sliced, white and light-green part
Red bell pepper 1 no. diced
Yellow peppers 1 diced
Cilantro ¼ cup, chopped
Feta (optional)
Pinenuts (optional)
Red Wine Vinaigrette Dressing:
Red wine vinegar ¼ cup
Onions sliced 1
Olive oil ½ cup, extra virgin
Rind of lemon 1
Juice of lemon 2
Brown sugar 2-3 tbsp
Garlic 1 tbsp
Cumin powder, roasted 1 tsp
Salt & Pepper to taste
Instructions
For the dressing mix all the ingredients together and bring to a boil. After cooling can be refrigerate.
Bring large pot of salted water to boil. Add quinoa, cover and cook on medium heat until white dot of uncooked starch in centre is gone 11-14mins. Drain and spread on a large plate to cool.
While quinoa is cooking, whisk together dressing of lemon zest and juice, butter, honey, salt and pepper in a bowl. Until combined.
Put quinoa in a bowl with corn, scallions, pepper and cilantro and toss with dressing before serving.
