ABOUT Brinjal Fry RECIPE

Brinjal sauteed in a tangy marination of tomato, onion, garlic and spices.

Ingredients Serving: 3

  1. Long brinjal 4
  2. Onion 2
  3. Tomato 2
  4. Garlic 4
  5. Ginger 1 small piece
  6. Coriander leaves 1 sprig
  7. Pudina 5 to 6 leaves
  8. Chilly powder 1/2 tsp
  9. Haldi 1/2 tsp
  10. Amchur powder 1/2tsp
  11. Salt to taste
  12. Saunth and jeera for seasoning
  13. Oil for frying

Instructions

  1. Peel, clean, wash and chop all vegetables.
  2. In a large kadai, heat 2 tbsp oil and season with saunf and jeer.a
  3. Add chopped onion and fry for 2 minutes.
  4. Now add chopped tomatoes and sautee.
  5. Pound garlic, ginger, and coriander leaves to a coarse paste.
  6. Add this mixture and saute over medium flame, also adding all the spices and salt.
  7. Toss over high flame for 1 minute and then stir vigorously on medium flame.
  8. Add chopped pudina and repeat the above style of cooking
  9. Add 1/2 cup water and saute till brinjal cooks well.
  10. Serve with hot rice or nan
