ABOUT Nutty juicy brinjal RECIPE

This recipe is made with a blend of coconut milk and curd to give unique sweet and sour taste to tingle your tastebuds

Ingredients Serving: 4

  1. Whole small brinjal 10 nos
  2. Coconut milk 1 1/2 cups
  3. Ginger paste 1/2 tsp
  4. Green Chilli paste 1 tbsp
  5. Salt to taste
  6. Sugar 2 tbs
  7. Cream 2 tbs
  8. All spice powder 1/2 tsp
  9. Curry leaves 20 nos
  10. Coriander leaves 2 tbs chopped
  11. Turmeric 1/2 tsp
  12. Curd 1 cup
  13. Jeera powder 1/2 tsp

Instructions

  1. Take a kadai & pour coconut milk ,add salt ,turmeric powder,curry leaves ,coriander leaves, ginger chilli paste along with brinjals & cook in low flame.
  2. Once it is cooked ,take out the brinjals & strain the coconut milk .
  3. Now take the kadai and add the brinjals , pour the strained coconut milk,curd ,sugar , salt to taste, mix it properly cook it two minutes.
  4. Lastly pour cream and take it off from gas stove.
  5. Garnish with jeera powder ,all spice powder ,cream & serve.
