Coconut Burfi is always my favorite. My Naani maa used to make it for us. Following her traditinal recipe.
Mix the grated coconut and milk leaving 1/4 cup of grated coconut for garnishing
Keep it aside for 45 minutes atleast
Now heat the ghee in a pan and then pour the coconut mixture in it.
Stir it for 5 minutes
Now add khoya in it and keep stirring it for at least 15 minutes
Add sugar in it and mix it well
Keep stirring so that i won't stick on the base
Ghee will leave sides after 5 minutes almost
Now in a greased plate, pour the mixture and if you want to use food color, then in 1/4th batter add color and make a base layer of that
Keep it in refrigerator for 15-20 minutes
Garnish it with left grated coconut and chopped almonds
Serve with hot elaichi ginger tea..
