ABOUT Dry fruits and fruits cake in pressure cooker RECIPE

Healthy and yummy cake filled with apple, banana, orange zest, coconut, tutti frutti, pistachios, almonds, raisins, cashews and melon seeds.

Ingredients Serving: 4

  1. All purpose flour/maida 3/4 cup
  2. Whole Wheat /atta - 1/4 cup (you can take only maida or wheat flour and change the ratio of flours per choice)
  3. Baking powder 1/2 teaspoon
  4. Baking soda 1/2 teaspoon
  5. Oil /butter /cream or malai 1/2 cup
  6. Milk 1/2 cup
  7. Sugar 3/4 cup
  8. Vanilla essence 1 teaspoon
  9. Coconut - 1/4 cup grated finely (use either fresh or desiccated coconut)
  10. Apple 1 medium
  11. Banana 1 fully ripen
  12. Orange zest 1 teaspoon grated finely
  13. Tutti Fruitti, Pistachios, Almond, Cashew nuts, Raisins and Melon seeds - 3/4 cup

Instructions

  1. Grease the cake pan with butter, dust with 1 teaspoon flour and set aside.
  2. Grate apple and heat it with sugar in a pan till it dissolves and mix completely. Do not cook too much, heat till sugar melts and then let it cool completely.
  3. Take the banana in a mixing bowl and mash it nicely with a help of a fork. Add sugar and the apple mixture and whisk nicely to make a smooth lump free mixture. Add cream, vanilla essence and mix well.
  4. Add the flour, baking powder, baking soda in the wet ingredients and gently fold it gradually with milk. Make a smooth batter without lumps.
  5. Add the grated coconut and orange zest to the batter. Mix well. Add half the dry fruits to the batter reserving some for putting on the top. Mix well.
  6. Add and mix 1 teaspoon flour to the remaining dry fruits and keep them aside. Pour the batter over the greased cake pan. Dust coat the dry fruits on top of the cake.
  7. Remove the gasket and whistle from the cooker. Cover it and simmer the heat. Cook on a low heat for 40 minutes. A tooth pick inserted should come out clean, If not cook for another 5 minutes.
  8. Remove the gasket and whistle from the cooker cover. Mine took 60 minutes in baking/cooking.
  9. Turn off the heat, remove the lid and let the cake be in the cooker for 5 more minutes.
  10. Remove the cake from the cooker carefully. Invert the cake in a serving plate, let it cool down completely, cut and serve. In the oven bake the cake for 30 to 35 minutes on 180 degrees centigrade.
