When I think of comfort food I think of the food my mom makes . The yummy pulao , raita, paratha and lime pickle is super comforting

Ingredients Serving: 4

  1. 2 cups sliced carrots
  2. 1 cup chopped potatoes
  3. 1 cup peas
  4. 2 cups cauliflower florets
  5. 3-4 large chillies
  6. 1 cup shredded carrots
  7. 1 cup finely chopped tomatoes
  8. 2 large onions sliced thin
  9. 2 cups curd
  10. 1 large lemon
  11. 2 cups wheat flour
  12. Half cup ghee
  13. 1 cup oil
  14. 2 cups basmati rice
  15. 3-4 cups water
  16. 1 cup chopped coriander leaves
  17. 6-7 mint leaves
  18. 2 tsp cloves, 4-5 elaichi, 2 cinnamon sticks, 1 bay leaf
  19. 1 spoon chilli powder
  20. 1 spoon coriander powder
  21. 1 spoon turmeric
  22. 1 cup green beans
  23. 4-5 large cashews

Instructions

  1. Pulao Recipe
  2. Take a pan add some oil and 1 spoon ghee , add elaichi, cloves and Bay leaf
  3. Sauté well till masala aroma comes out, add onion and sauté well
  4. At this stage add carrot, 1 cup cauliflower,1 cup green beans and potato
  5. Sauté well and add 2 cups water to cook vegetables
  6. Cook basamati rice separately
  7. Take a blender and blend 2 green chillies, half cup coriander leaves and mint
  8. Add water and blend well
  9. Add to vegetables that are cooking in pulao
  10. Mix the rices when vegetables are done
  11. Add skat to taste
  12. Take a pan add the ghee and sauté the cashews
  13. For making Carrot Raita
  14. Shred carrots well
  15. Take a pan and add oil, when this is hot add some cumin and let this splitter well
  16. Add onions, shredded carrots and chopped tomato
  17. Sauté for 3-4 minutes
  18. Add half a green chilli chopped well
  19. Add salt to taste and mix well with beaten curd
  20. Yummy raita is ready
  21. Cauliflower paratha
  22. Shred cauliflower florets well in a shredder
  23. Add salt , coriander powder, chilli powder and turmeric
  24. Make Chapathi and stuff the gobi filling
  25. Partahas are ready and cook them in slow flame with ghee
  26. To make lemon pickle
  27. Chop a whole green chilli and a lime
  28. Take a pan heat oil and add chopped chilli and lime
  29. Add turmeric and salt and lime chilli pickle is ready
