ABOUT Roasted Pumpkin & Coconut Soup RECIPE

This Pumpkin and Coconut soup is a very healty vegan soup with flavour of roasted pumpkin and curry leaves. The addition of coconut milk gives this soup a special creamy texture and delicate flavour. A perfect appetizer or snack for anytime.

Ingredients Serving: 2

  1. Red pumpkin pieces 2 cups
  2. Coconut milk 1/2 cup
  3. Medium Onion chopped 1
  4. Green or red fresh Chilli 2
  5. few curry leaves
  6. Coconut or vegetable oil 1 teaspoon
  7. Few Coconut slices to garnish
  8. Few Croutons to garnish
  9. Chopped fresh chilli to garnish

Instructions

  1. Dry roast pumpkin pieces in a non stick pan till the pieces become soft and charred.
  2. Transfer to a dish.
  3. In the same pan pour 1 teaspoon of oil.
  4. Add curry leaves ,chopped onion and chillies.
  5. Saute till they become soft and little charred.
  6. Transfer to a blender with roasted pumpkin.
  7. Add 1&1/2 cup of water and blend to a smooth puree.
  8. Add the puree to a saucepan and place to stove top.
  9. Add salt and 1/2 cup of coconut milk.
  10. Bring to boil.
  11. Check the seasoning and remove from heat.
  12. Transfer to 2 serving bowls.
  13. Dry roast the coconut flakes.
  14. Garnish the soup with some bread croutons, roasted coconut flakes, fresh chilli and coconut milk.
  15. Serve hot or room temperature.
