Ingredients Serving: 4

  1. Flour - 3 1/2 cups
  2. Dry Yeast - 2 tbsp
  3. Milk - 3 tbsp
  4. Water - 1 cup
  5. Salt - 1 1/2 tsp
  6. Egg - 1
  7. unsalted Butter - 2 1/2 tbsp
  8. Chicken burger (KFC style): Ingredients : Chicken breast - 1
  9. Buttermilk - 1 cup
  10. Salt and pepper as per taste
  11. Garlic powder 1 1/2 tsp
  12. Onion powder 1 1/2 tsp
  13. Oregano 1 tsp
  14. Basil as per taste
  15. Cayenne pepper as per taste
  16. Flour - 1 1/2 cup
  17. Egg 1
  18. Milk 1 to 2 tbsp
  19. Refined oil 1 to 2 tsp
  20. Mayonnaise: Egg yolks - 2
  21. Olive oil - 1/2 cup
  22. Vegetable oil/refined oil - 1/4 cup
  23. Salt as per taste

Instructions

  1. Warm the milk and water, add sugar to it and mix in the yeast to activate it.Rub the butter (should be at room temperature), into the flour, along with salt.
  2. Now when the yeast is activated (there will froth or foam on top), whisk an egg into it. Pour this mixture into the flour and knead it to form a soft dough.
  3. Cover this with a cloth and let it proof or rise in a warm place for at least 1.5 - 2 hours.
  4. Knock the dough to deflate it and knead it again for few seconds and divide into 5-6 balls. Apply little oil on top and cover with a cling film. Let it rise again, for an hour.
  5. Now spread some sesame seeds and bake them for 20 minutes in a preheated oven at 180 degree centigrade.
  6. Slice the chicken breast into half horizontally so that it opens like a butterfly shape. Now cover it with cling film and bash it with a mallet or a rolling pin to flatten it.
  7. Now marinate this in buttermilk, salt and pepper for at least 2 hours. Now add the spices into the flour along with some salt.
  8. Take the chicken out from the buttermilk and dip it in the flour mixture. Now dip the chicken in a mixture of whisked egg and milk, and dip it again in the flour mixture.
  9. Now deep fry them in hot oil.
  10. Whisk the egg yolks till they are pasty. Now slowly add the olive oil slowly while whisking the egg yolks, followed by the refined oil.
  11. Whisk till you get the thick consistency. Finally add salt according to your taste. Refrigerate it.
  12. Finally assemble.
