  2. Red Chilli Paste as per your taste and spice level
  3. Black Pepper corns 10 nos
  4. Turmeric powder a generous pinch
  5. Ginger 1/2inch piece
  6. Garlic 8 pods
  7. Green onions with bulbs 1 cup.

  9. Coriander leaves 1/4 cup
  10. Onion 1 medium
  11. Curry leaves and Green chillies for garnishing
  12. Oil for frying any refined vegetable oil will do. I used sunflower oil

Instructions

  1. Instead of chilli paste you can boil dried red chillies and use it along with other ingredients while grinding the masala.
  2. Grind all the ingredients except chicken, green chillies and curry leaves without adding water, if too thick add little oil before marinating.
  3. Marinate the chicken and keep for 10 minutes. For better taste marinate and keep in fridge overnight.
  4. In a deep bottomed pan add generous amount of oil for shallow frying.
  5. Fry the marinated chicken till done over medium flame.
  6. Before taking the chicken out of the pan quickly add the curry leaves to the oil. This will splutter. So please take care, take out the chicken along with curry leaves.
  7. In the same oil add onion and slitted green chillies and fry till crisp. Use this as garnish for your fried chicken.
  8. Serve as a starter or along with Chapathi.
