ABOUT Jowar Fried Rice RECIPE

Try this yummy fried rice made of jowar and serve something different to your family. It will be very much appreciated. Add in some of your favourite veggies or some boiled and shredded chicken / prawns for a non-veg. version. It can be relished just as it is or with any side dish. It makes for a wholesome one-pot meal and can be packed for lunch too.

Ingredients Serving: 3

  1. 1/2 cup jowar, soaked overnight
  2. 1 tbsp. oil
  3. 1 tbsp. ghee
  4. 1" cinnamon stick
  5. 2 green cardamoms
  6. 4 cloves
  7. 1-2 dry red chilies
  8. 1-2 bay leaves
  9. 1 tsp. cumin seeds
  10. 1 tsp. ginger, chopped
  11. 1 cup mixed veggies
  12. 1 onion, sliced
  13. 1 tsp. garam masala powder
  14. salt to taste
  15. 7-8 cashew nuts
  16. 7-8 almonds
  17. 2 tbsp. coriander leaves, chopped

Instructions

  1. Pressure cook the soaked jowar in sufficient water for 15 minutes on a low flame after the first whistle. Drain and keep aside.
  2. Heat oil and ghee in a pan. Temper with bay leaves, dry red chilies, cinnamon, cardamom, cloves, cumin seeds and ginger. Saute for a few seconds.
  3. Add the onion and stir fry till light brown.
  4. Add the mixed veggies and stir fry for a minute.
  5. Add the boiled jowar, salt, cashews, almonds & garam masala powder.
  6. Mix Everything well and stir fry for 2-3 minutes. Switch off the flame and garnish with coriander leaves.
  7. Serve with any side dish or relish just as it is.
