These balls are veggie loaded as the title says and full of flavors that remind me of Manchurian dishes but the added twist of plantain makes it unique and one of a kind ..Plantain veggie balls serve as a great starter or snack option satisfying the palette of each and everyone !!

Ingredients Serving: 4

  1. For the dumplings : 2 medium nos : Plantains boiled , peeled and grated
  2. 1 medium : Onion minced
  3. 1 cup : Cauliflower minced
  4. 1 cup : Carrot minced
  5. Few sprigs : Coriander finely chopped
  6. 4 nos : Green chillies minced
  7. 2 tbsp : Rice flour
  8. 1/4 cup : Gram flour / Besan
  9. Salt to taste
  10. 1 tsp : Red chilli powder
  11. 1/8 tsp : Turmeric
  12. 1 tsp : Garam masala powder
  13. 1 tsp : Aamchoor / dry mango powder
  14. 1 tsp : Ginger Garlic paste
  15. 1 tbsp : Coriander cumin powder
  16. 1 tsp : oil for sauteeing
  17. 1 tsp : Cumin seeds
  18. For the Tempering : 1 small : Onion sliced
  19. Few sprigs : Coriander finely chopped
  20. Few sprigs : Green onions chopped
  21. 4 nos : Garlic cloves chopped
  22. 1 tbsp : Soy sauce
  23. 1 tsp : Tomato ketchup
  24. Oil for shallow frying

Instructions

  1. Boil the plantain, peel, grate and set aside. Mince all the other veggies mentioned in dumplings section and set aside. Heat up a pan on medium heat with a tsp of oil, add the cumin seeds allow them splutter. add in the ginger garlic paste and saute.
  2. Next add the chopped onions and minced green chillies along with turmeric and saute until onions turn slightly golden. Next stir in the minced carrots, cauliflower and saute for couple of minutes until they dry out a bit.
  3. Add the grated plantain and saute this for few minutes, stir in the salt chilli powder, garam masala, aamchoor powder, coriander cumin powder and give it a good mix until all are combined and cook on low heat
  4. Turn off the heat and remove this in to a mixing bowl and allow the mixture to cool at room temperature. Next add the rice flour, besan, coriander leaves and knead this into a dough like texture with the moisture of the veggies.
  5. Once kneaded take a spoonful of dough at a time and shape/ roll it into a ball. Heat the oil for shallow frying, add the dumplings to the hot oil and fry until golden on all the sides by flipping them in intervals.
  6. Later drain them on to a paper towel and prep up for the tempering by slicing the onions,, chopping garlic , coriander and green onions. Next heat up a pan with a tbsp of oil and add the onions , garlic ..now saute this on high heat until garlic and onion caramalise a bit .
  7. Next stir in the fried dumplings and coriander along with soy sauce , ketchup . cook for a minute keeping it covered. Lastly sprinkle the green onions and turn off the heat.
