Ingredients Serving: 4

  1. Boiled pasta al dente 250 gms
  2. Tomatoes 3 numbers
  3. Capsicum and baby corn half cup chopped
  4. Carrots 3 nos peeled & boiled
  5. Paneer cubes 12 pcs
  6. Cheddar cheese 2 cubes grated
  7. Onions finely chopped 2 nos
  8. 6 Garlic cloves finely chopped
  9. 1 tsp ginger garlic paste
  10. Half a tsp salt
  11. 2 tsp pepper
  12. 1 cup milk
  13. Sugar half tsp
  14. 1 tbsp red chili paste
  15. 2 tsp tomato sauce or tomato puree
  16. Salt to taste
  17. Herbs like oregano or basil for garnish
  18. 10 cashewnuts

Instructions

  1. Add and boil the pasta for 6 to 7 minutes once water comes to a rolling boil. Add salt and a tsp of cooking oil. Drain the hot water and wash under cold water. Drain and keep aside after adding a tsp of cooking oil and tossing it well.
  2. In a pan add 2 tsps olive oil and add the chopped onion once the onion turns translucent add the chopped garlic and saute well.
  3. Once onions are light brown add the ginger garlic paste and red chili paste and saute well
  4. Once the raw smell of the ginger garlic paste subsides add the chopped capsicum, baby corn and paneer cubes. Cover and cook until veggies are cooked but still crunchy
  5. Add the chopped tomatoes and saute them until the tomatoes turn mushy.
  6. In a blender blend together boiled carrot half cup milk, 2 cloves garlic and 10 cashewnuts
  7. Add tomato puree or sauce to the tomato onion mixture and combine well. Now add the carrot cashewnut puree and mix well.
  8. Immediately after adding the carrot cashewnut sauce add the drained pasta so that the sauce does not get time to evaporate. Keep flame on sim.
  9. Add the remaining milk and grated cheese and mix well until cheese melts and the sauce now coats the pasta
  10. Add half a tsp of sugar, salt to taste and pepper. Garnish with crushed oregano or basil.
