Ingredients Serving: 2

  1. Idlis medium sized 2
  2. Butter unsalted 1/4 cup
  3. Vanilla essence 3/4 teaspoon
  4. Chopped pistachios 2 tablespoons
  5. Chopped toasted almonds 1 tablespoon
  6. Cocoa powder 1.5 teaspoon
  7. Brown sugar 2 to 3 tablespoons
  8. Water 1/4 glass
  9. Raisins for garnishing

Instructions

  1. Cut idlis into bite sized pieces .
  2. Heat a pan . Melt 5 tablespoons butter.
  3. Add the idli pieces and roast until golden brown.
  4. Remove from the heat . Cool and grind to a coarse powder .
  5. Heat 1/4 cup water in another pan .
  6. Add sugar and stir until sugar dissolves completely and boils for 2 minutes .
  7. Add vanilla essence .
  8. Add the idli powder to the sugar syrup.
  9. Add sieved coco powder and mix completely to ensure no lumps .
  10. Stir continuously until mixture firms.
  11. Add remaining butter and stir till the pudding rolls over the spatula .
  12. Add almonds and few pistachios .
  13. Fill the pudding in two small moulds / bowls .
  14. Tilt the first one on the plate . The first pudding has fallen beautifully on the plate . Layer chopped pistachios .
  15. Now patiently tilt the second mould on the pistachio layer .
  16. Top it up with few raisins .
  17. Buttery Choco Idli pudding is ready .
  18. Serve warm/ cold as preferred . Just refrigerate and serve if preferred cold.
