Quinoa Spaghetti tossed with kaffir lime leaves & Parmesan Cheese.

Ingredients Serving: 3

  1. Quinoa Spaghetti –250 gms
  2. Chopped Garlic – 1 tblsp
  3. Kaffir Lime Leaves /Lemon Leaves - 3
  4. Dry chili - 1
  5. Shallots - 2
  6. Parmesan Cheese– 2 tblsp
  7. Oil – to toss– 2 tsp
  8. Dry Garlic Powder - 1 tsp
  9. Parsely - handful finely chopped
  10. Salt to taste

Instructions

  1. Blend lime leaves, dry chili, salt and shallots in a mortar.
  2. Follow the instructions in your spaghetti packet and cook the spaghetti.
  3. Take a pan add oil and once heated add chopped garlic. Let it fry and turn golden brown.
  4. Add Lime leaves mix, garlic powder and sauté. Adjust with salt if necessary.
  5. Add the cooked spaghetti and toss well.
  6. Add parmesan cheese and mix well.
  7. Leave it for 5-10 mins before serving so that lime leaves and the spaghetti marinates well with the dish.
