ABOUT Baigan Chokha RECIPE

Baingan choka as it is called in bihar is a delicious fire roasted mashed aubergine dish that is served with paratha.

Ingredients Serving: 2

  1. Eggplant - 500 gm
  2. onion - 1 whole mid size chopped
  3. Tomato one chopped
  4. Chopped garlic - 1 whole small size
  5. Ginger paste - 1 tbsp
  6. Coriander leaves - 1 tsp chopped
  7. Salt - to taste.
  8. Garam Masala-1/2 tablespoon
  9. Green Chili - 4-5
  10. Red Chilli powder-1/2 tablespoon
  11. Cumin seeds - 1/4 tablespoon
  12. Oil-2-3 tablespoon

Instructions

  1. Wash the eggplant and brush oil all over it . Now take a grill and cook the eggplant from every side evenly. after that keep them for cooling.
  2. After cooling peel off the skin and and mash the pulp.
  3. Heat oil in a pan and add cumin seeds ,wait till it gets brown.Then add green chilli, garlic, ginger, and then onion and cook for 4 to 5 mintues.
  4. Now add red chili powder , turmeric , garam masala and mix it nicely. let it cook for 5 mins.
  5. Now add the mashed eggplant in the pan. cook it for 5 minutes.
  6. Put off the flame and garnish the bharta with coriander leaves. your dish is ready to be served.
