Ingredients Serving: 4

  1. 4 big size new Potato
  2. 200 gms sour cream
  3. 2tbs tomato ketchup
  4. 1tbs cracked pepper
  5. 1tbs chopped parsley
  6. 1/2chopped red bell pepper
  7. 2tbs cream cheese
  8. Salt to taste
  9. 4 tbs butter

Instructions

  1. Wash the potatoes whole slice the potatoes about 1/4-inch apart and about three-quarters of the way through to create a series of uniform slices so that they are still joined together at the bottom. This should create a fan type finish .
  2. Rub melted butter on the potatoes with salt n pepper , making sure that the slits in the potato soak up the mixture as well. Place the potatoes on a baking sheet and bake for 30 minutes.
  3. Mix the sour cream , cream cheese parsley , ketchup , chopped red bell pepper , salt n pepper
  4. Once the potatoes are baked just top it with the sour Cream mixture and serve as a side
