ABOUT Mawa/Khoya Badam Cupcakes filled with Orange Jam and topped with Cherry Coulis RECIPE

I referred the recipe of the Mawa cupcake from Chef Sanjeev Kapoor website. They had used cashews and I used badam instead. Also to make it more exotic I filled it with orange jam and topped it with cherry coulis. I didn’t want to add any cream rather wanted to try some fruit based filling and topping. It was a huge hit at home.

Ingredients Serving: 3

  1. For the Khoya Cupcake:
  2. Khoya/Mawa - 100 gms
  3. Badam powder -2 tablespoons
  4. Badam chopped - 2 tablespoons
  5. Maida - 100 gms
  6. Baking soda 1/2 tablespoon
  7. Baking powder 1 teaspoon
  8. Milk powder – 2 tablespoons
  9. Butter (unsalted and soft) - 3 tablespoons
  10. Sweetened condensed milk - 200 gms
  11. Vanilla essence - 1 teaspoon
  12. For cherry coulis::
  13. Cherries – around 25, halved
  14. Water 1/2 Cup
  15. Sugar 2 tablespoons

Instructions

  1. Recipe for Khoya Badam Cupcakes::
  2. Sieve maida, baking powder and baking soda in a bowl.
  3. Add the milk powder, badam powder, butter and mawa and beat with a hand mixer.
  4. Add condensed milk little by little and beat till well blended.
  5. Add vanilla essence, chopped badam and mix.
  6. Preheat oven to 180 deg C for 10 minutes.
  7. Grease the cupcake moulds with butter and spoon the batter in them. Pour it upto ¾ of each mould not more than that.
  8. After the oven is preheated, place the cupcake moulds in the oven and bake for about 15 minutes or till a tooth pick comes out clean.
  9. Cool down and remove them from the mould. The cakes will be very soft and fluffy.
  10. For the cherry coulis:
  11. Boil the cherries with water,sugar till the cherries are soft
  12. Remove from heat,cool down and blend them in a blender. Strain it if needed.
  13. For assembling:
  14. Fill the orange jam in a piping bag, and insert the nozzle into the center of the cupcake and squeeze it pulling the bag upwards. Stop when you reach the top. Do it gently without breaking the cupcake.
  15. Top the cupcakes with coulis and garnish with cherries and nuts.
