ABOUT Baked masala brinjals RECIPE

Yummy brinjals spiced in by mixed masala filling kept on a bed of onion tomato paste...baked to avoid the fried baigan conventional style and have a healthy baigan masala.Enjoy with chapatis or tandoori naan home style.

Ingredients Serving: 2

  1. 250gms small seedless brinjals
  2. 1onion medium and 1 tomato medium
  3. 1tspn Garlic mashed
  4. Salt to taste
  5. 1 tspn ghee to grease baking bowl and give flavour
  6. 1 tspn each of red chillipowder and coriander powder
  7. 1/2 tspn turmeric and mango powder
  8. Cumin powder a pinch or two
  9. For Tandoori roti or Naan::
  10. 500 gms maida
  11. Salt and half cup curd

Instructions

  1. Wash dry and slit brinjal just enough up to the stem.
  2. Mix all spices together.
  3. Chop onion and tomatoes finely and mix the smashed garlic too.
  4. Now fill the brinjals with the dry powder mix of the spices and keep aside.
  5. Grease oven tray or round container with ghee and spread onion tomato garlic mix well.
  6. Now place brinjals on this bed.
  7. Can brush some ghee, oil or butter on them (optional).
  8. Preheat oven or OTG for 15min 180 degree and place to bake brinjals for 30min.
  9. Remove from oven to avoid shrinking.
  10. For naan::
  11. Knead dough and keep for at least 6 hrs before making or use Self raising flour and keep 1 1/2 hour before doing the naans.
  12. Grease ur palm a little and shape, roll your naans on hands on roll or like usual chapatis but thicker.
  13. Serve hot.
  14. Heat tava sprinkle water and put your naan slow gas let bottom cook and overturn tava on flame to give tandoori effect.
  15. Serve hot with chutney and baked brinjals.
