ABOUT Eggless Apple Cinnamon-coffee Upsidedown Cake RECIPE

Quick eggless cake goes well with a cup of tea. Spoft-spongy and filled with aroma of coffee and cinnamon, this is perfect for any occasion.

Ingredients Serving: 8

  1. 1 1/2 cups maida/ all purpose flour
  2. 1 tbsp baking powder
  3. 1 tsp baking soda
  4. Pinch of salt
  5. 1 tbsp cinnamon powder
  6. 1 tbsp instant coffee powder mixed in 4 tbsp water
  7. 1/2 cup brown sugar
  8. 250ml condensed milk
  9. 115 gms unsalted butter
  10. 1 cup thinly sliced red apples
  11. Handful of cranberries
  12. 3/4th cup buttermilk - luke warm
  13. For Garnish: Icing sugar and salted caramel sauce (preferably homemade)

Instructions

  1. Preheat your oven to 200°C for 10 mins, meanwhile prepare your batter.
  2. Sieve together flour, salt, baking powder, baking soda, cinnamon in a large bowl and set aside.
  3. In another bowl, beat together brown sugar and butter for a few minutes. Add condensed milk and coffee mixture and combine well. Add in the cranberries and buttermilk and mix well.
  4. Now add dry ingredients to wet ingredients in 2 parts. Mix together well so that there are no dry lumps left, but do not overmix it.
  5. Spray some oil to your baking pan and line it with parchment paper on the base and the sides.
  6. Place sliced apples on the base in an overlapping pattern and cover the base of the pan completely. Pour the batter over it and tap for any air gaps.
  7. Bake it for 45mins to 1 hour at 150°C. I baked it for an hour. Adjust the time as per your oven as every oven behaves differently.
  8. Check with a toothpick after an hour, it should come out clean.
  9. Let it cool for 20 mins before demoulding. Dust with icing sugar and serve warm with some drizzle of salted caramel sauce.

Very good recipe I want to know that in caramel sauce sugar have to be cooked without water?
