Dry roast oats on medium flame and set aside. Cut carrots, potato and beetroot into small cubes. String and chop the beans.
In a pan, heat oil and drop mustard seeds, chana dal and urad dal. Saute until mustard starts to crackle.
Add green chilies and onions. Fry and add vegetables with 2 cups of water.
On high flame, bring this to a boil and cook covered on low flame until vegetables are cooked. Add in roasted oats and cook for 5 minutes.
Remove from heat and sprinkle lemon juice. Garnish with fresh coriander leaves and serve hot.
