Ingredients Serving: 4

  1. For crust-
  2. 15- ginger cookies
  3. 1- tablespoon all purpose flour
  4. 1- tablespoon powdered sugar
  5. 1 pinch of salt
  6. 4- tablespoon melted butter
  7. For filling-
  8. 1- teaspoons unflavored powdered gelatin
  9. 1/4- Cup milk
  10. 1 1/2- cup hung curd
  11. 3-4 tablespoon powdered sugar
  12. 1- teaspoon finely grated lemon zest
  13. For compote and assembly-
  14. 1 1/2- cup seedless cherries
  15. 1/2- cup sugar
  16. 4- tablespoon lemon juice
  17. 1- teaspoon freshly ground black pepper
  18. Pinch of salt

Instructions

  1. For ginger cookies crust-
  2. Place a rack in middle of oven and preheat to 200°.
  3. Pulse ginger cookies in a food processor until very fine crumbs form .
  4. Add flour, sugar, and salt and pulse to combine.
  5. Add butter and pulse until mixture is the consistency of wet sand.
  6. Transfer mixture to a 9” pie dish,using fingers press firmly on bottom and upsides of pie dish.
  7. Now bake it for 10 minutes at 200°.
  8. After this transfer pie dish to a wire rack and let crust cool.
  9. For filling-
  10. Place gelatin and 1/4 Cup of milk in a small bowl and let stand until gelatin is softened.
  11. Now whisk hung curd, powdered sugar and lemon zest.
  12. Now add gelatin and milk mixture and again whisk until smooth.
  13. Now pour into the pie crust and chill until set,at least 3-4 hours.
  14. For compote-
  15. Take cherries, sugar, black pepper, lemon juice and salt in pan and boil over high heat, till sugar dissolves while stirring continuesly.
  16. Reduce heat and stirring occasionally, until cherries became soft and mixture is syrupy, it will take 4-5 minutes.
  17. Cool the compote.
  18. For serving cut the slice of pie and pour the compote over it.
