ABOUT Gulabjamun cheesecake RECIPE

Ingredients Serving: 4

  1. 8 graham cookies or cracked cookies of your choice
  2. 1 tbsp melted butter
  3. 1 cup Cheese
  4. 1 tsp rose water
  5. 1/2 cup chopped cashew
  6. 1/2 cup condensed milk
  7. 1 cup paneer
  8. 1/2 cup hung yogurt
  9. 8 pieces of mini gulabjamun or 4 piece regular gulabjamun
  10. 4 strands of saffron
  11. 1/3 cup Milk
  12. Edible flowers or rose petals with pistachios for garnish
  13. 1 tsp gelatin or agar agar
  14. 1 pinch cardamom powder

Instructions

  1. For the base: take a bowl and add cracked cookies or graham cookie crumbs. Add melted butter, chopped cashews and mix it well. Spread it evenly at the base of a tin and press. Keep it in refrigerator.
  2. For the filling: take paneer, hung yogurt, condensed milk, cream in a blender and blend it until you get a smooth mixture.
  3. Soak saffron in warm milk for 5 minutes. And gelatin in warm water for 5 minutes and microwave it for 20 seconds.
  4. Take the cheesecake mixture and strain gelatin water in it. Gently mix it. Add saffron, cardamom powder and mix well.
  5. Now take the tin and spread a thin layer of cheesecake mixture on the crust. Place gulabjamun on the next layer and again spread cheesecake mixture till the tin is completely filled.
  6. Refrigerate for 3-4 hours and garnish with flowers and pistachios. Serve chilled.
