ABOUT Ragi jaggery cookies RECIPE

Very healthy and delicious cookie recipe. Kids love cookies and it's the best way to feed them healthy and nutritious snacks loaded with the goodness of ragi, oats and jaggery.

Ingredients Serving: 3

  1. Ragi flour 1/2cup
  2. Wheat flour 1/2cup
  3. Jaggery grated /powdered 1/2cup or more according to taste
  4. Oats 4tbsp
  5. Unsalted butter 1/4cup
  6. Baking powder 1/2tsp
  7. Milk 2tbsp

Instructions

  1. Dry roast the ragi flour on a very low flame for about 8-10mins. Cool.
  2. Take a mixing bowl, add ragi flour, wheat flour, jaggery, oats, baking powder. Mix well.
  3. Add butter few tsp and mix with hands rubbing the mixture well. Add part by part.
  4. Next add 1tbsp milk and mix till all combined well and forms a dough. Don't overknead.
  5. Wrap the dough with a cling wrap and place in the refrigerator for 30mins.
  6. Take out and roll with a rolling pin and shape according to your wish.
  7. Put in a baking tray and bake for 15-18mins in a preheated oven 160°.
  8. Cool and serve. Rest keep in an airtight container.
