ABOUT Kashmiri Dum Aloo RECIPE

This recipe of Kashmiri dum aloo does not have any onion and garlic, fried small round/egg shaped potatoes are added in this aromatic spiced gravy, potatoes absorb all the flavours of the spices and curd while cooking, it's a spicy vibrant curd based gravy, a delicious cuisine for the parties.

Ingredients Serving: 3

  1. Potatoes 5 small sized Boiled,peeled and pricked all over (round/egg shaped)
  2. Hung curd/yogurt 1/2 cup
  3. Mustard Oil for deep frying plus 3 tablespoon for making subzi
  4. Salt to taste
  5. Sugar 1/4teaspoon
  6. Hing a pinch
  7. Kashmiri dry red chillies 3-4, plus for decorating
  8. Ginger julliens 1 tablespoon or ginger powder 1/4 teaspoon ( take any one, as per choice)
  9. Green chillies chopped 1-2
  10. Coriander leaves 2 tablespoons finely chopped
  11. Water 1/2 cup
  12. Cardamom 2 pounded
  13. Cinnamon stick 1 small tukra pounded
  14. Clove 2 pounded
  15. Fennel seeds 1/4teaspoon (saunf)
  16. Cumin seeds 1/4teaspoon
  17. Turmeric powder 1/4teaspoon
  18. Red chillie powder 1/4teaspoon
  19. Coriander powder 1/4teaspoon
  20. Garam masala powder 1/4teaspoon

Instructions

  1. HEAT MUSTARD OIL FOR DEEP FRYING TILL IT REACHES SMOKING POINT
  2. PRICK 5 BOILED POTATOES ALL OVER
  3. PUT THE POTATOES IN HOT OIL
  4. FRY TILL GOLDEN BROWN
  5. REMOVE & KEEP ASIDE
  6. CRUSH 1/4 TSP EACH OF FENNEL SEEDS, 1 CINNAMON STICK, 2 EACH OF CARDAMOMS & CLOVES
  7. KEEP GROUND MASALA ASIDE
  8. ADD 1/4 TSP EACH OF CUMIN, THE DRY MASALAS, & THE GROUND MASALA POWDER
  9. ADD 1/4 TSP ASAFOETIDA, 3-4 DRY RED CHILLIES, 1 TBSP GINGER JULIENNES, 2 TBSP CORIANDER & 1-2 GREEN CHILLIES
  10. MIX WELL, ADD LITTLE WATER
  11. ADD 1/4 TSP SUGAR & SALT
  12. ADD 1/2 CUP HUNG CURD, MIX
  13. BOIL TILL THICK, ADD THE FRIED POTATOES
  14. COOK TILL GRAVY COATS THE POTATOES
  15. SERVE HOT
