Ingredients Serving: 4

  1. 4 Onion, Medium Size Finely Sliced
  2. Fresh Garlic 50g
  3. Fresh Ginger 25g
  4. Tomato 200g
  5. Potato 300g
  6. Bay Leaves 3-4
  7. 1 Spoon Cumin Seeds
  8. Cardamom 4-5
  9. Cinnamon 1 Small Piece
  10. Whole Red Chilli 6-7 Piece

Instructions

  1. WASH AND CUT THE EGGPLANT INTO CIRCULAR/ LONGITUDINAL THIN PIECES AND KEEP ASIDE.
  2. POPPY SEEDS 
  3. BESAN
  4. RICE FLOUR
  5. KASHMIRI MIRCH
  6. IN A BOWL MIX BESAN AND ALL OTHER INGREDIENTS EXCEPT OIL AND WATER. SODA HELP GIVE BEGUNI A SLIGHT FLUFFINESS.
  7. NOW MAKE THE BATTER: BESAN, RICE FLOUR BAKING SODA, POPPY SEEDS, RED CHILLY POWDER, SALT AND WATER. MIX IT WELL.
  8. DIP EACH EGGPLANT PIECES IN THE BATTER AND THEN DEEP FRY.
  9.  DEEP FRY THEM TILL GOLDEN BROWN.EGGPLANT FRITTERS  
  10. EGGPLANT FRITTERS IS NOW READY. SPRINKLE LITTLE BIT OF  BLACK SALT ON IT FOR TASTE,SERVE HOT KHICHDI OR RICE
