Thick curd and the flavired coconut taste makes this curry a wonderful match for rice.

Ingredients Serving: 3

  1. Prefered vegetables - 1/3 cup
  2. coconut gratings - 1/3 cup
  3. curd -1 cup
  4. turmeric powder - 1 tbsp
  5. Green chillie - 3
  6. cumin seeds - 2 tbsp
  7. Curry Leaves - handful
  8. Corender leaves to decorate

Instructions

  1. 1/3 CUP COCONUT, 2 TBSP CUMIN SEEDS, 3 GREEN CHILLIES. MIX A TBSP TURMERIC POWDER IN 1 CUP CURD.
  2. ADD THE GRINDED PASTE IN TO THE CURD MIXTURE AND MIX WELL.
  3. SWITCH ON THE STOVE AND LET COOK IN SIM MODE. WAIT UNTIL THE FIRST BUBBLES COMES OUT.
  4. ADD THE BOILED VEGETABLES INTO THE CURRY. MIX WELL.
  5. SEASON MUSTARD AND CURRY LEAVES INTO 2 TBSP OG HOT COCONUT OIL. ADD TO THE CURRY.
  6. MIX EVERYTHING WELL AND LET COOK FOR 2 MORE MINS. I PREFER THIN CURRY. YOU CAN ADD A TBSP RICE FLOUR
  7. INTO THE HOT STEAMED RICE, ALONG WITH THIS MORE KULAMBU , PAPPAD WOULD BE VERY TASTY FOR A MID MEAL
