ABOUT Safed Matar Ghugni Chaat RECIPE

It is one of the famous street food of Kolkata and also of Bihar, a combination of tangy, salty and spicy flavours.

Ingredients Serving: 6

  1. 1 cup white matar /peas
  2. 1/2 tsp haldi/turmeric powder
  3. salt to taste
  4. water as required for cooking
  5. 1 tsp oil
  6. Other ingredients:
  7. 1 boiled potato, finely chopped
  8. 1 tomato, finely chopped
  9. 1 onion, finely chopped
  10. 2 green chillies, finely chopped
  11. 1 tbsp finely chopped ginger
  12. 1 tbsp finely chopped coriander
  13. 1 tsp bhuna pisa jeera, gounded cumin
  14. 1 tsp red chilli powder
  15. 1/2 tsp amchur powder
  16. A pinch of black salt
  17. 1/2 tsp chaat masala
  18. 1 tbsp lime juice
  19. 1 tbsp moori masala


  1. Soak the peas overnight for a minimum of 8 hours.
  2. The next morning, wash them and cook in a pressure cooker with salt, haldi, oil and water.
  3. Cook it on a high flame till 1 whistle blows, then lower the flame and cook for 15-20 minutes.
  4. When the cooker cools down completely then open it.
  5. To make the ghugni:
  6. Take a mixing bowl and put in the boiled matar and rest of the ingredients except the onion and coriander.
  7. The ghugni chaat is ready.
  8. Take a serving plate and serve the hot ghugni with a garnish of chopped onion and coriander.

I boiled the white matar today but now I will make it your style. .....looks so yummy
