ABOUT Dharwad Pedhas RECIPE

Dharwad pedhas are one of the favourites amongst all the pedhas, sold only by the Thakurs sweet shop at Dharwad in Karnataka. The preparation technique is a family secret and its availability is limited to very few shops across the country. So getting hold of them here in this region where I stay was next to impossible. That made me think if only I could replicate this sweet at home. Below is my attempt which turned out to be close to the original pedhas.

Ingredients Serving: 4

  1. Dulce de leche 396 gms [prepared using 1 sealed can of condensed milk in pressure cooker]
  2. Ricotta cheese 500 gms
  3. Cardamom powder 1./2 teaspoon
  4. Castor sugar for coating the pedhas.

Instructions

  1. I have prepared Dulce de leche at home using pressure cooker method. You may use storebought Dulce de leche which will cut the preparation time.
  2. To prepare Dulce de leche at home -
  3. Fill the pressure cooker (5 litres) more than halfway with water. Take the can of condensed milk, remove the paper label and then place it in the water. The can should be immersed in water fully.
  4. Cover the cooker with its lid, put the weight [whistle] and place it on high heat. Pressure cook for one whistle.
  5. After one whistle, lower the heat and cook it further on low flame for 25- 30 mins [Do not remove the whistle from the lid] . Switch off the flame and allow the cooker to cool on its own
  6. Once the pressure is released, open the cooker and carefully take out the can outside and keep on kitchen counter-top to cool overnight. Silk smooth dulce de leche is ready.
  7. Next day pour the dulce de leche from the can in a microwave safe vessel. Add ricotta cheese and mix it with a whisk to remove any lumps if any.
  8. Cook in the microwave for 5 mins uncovered. Take the vessel out, stir in well.
  9. Microwave for 5 mins uncovered. Take the vessel out, give a stir scraping the edges.
  10. Microwave for 2 mins uncovered. Give a stir.
  11. Microwave for 2 mins covered. Give a stir. Wipe the moisture from the lid
  12. Microwave for 2 mins with the lid kept cross covered. Take the vessel out and mix it well
  13. Microwave for 15- 20 mins uncovered, taking the vessel out and stirring the mixture every 2 mins. [Please be careful as the mixture will bubble up initially and wear oven mitts so that you don't get burned].
  14. Add cardamom powder and give it a stir.
  15. Allow the mixture to cool down and when the mixture is warm enough to handle, shape them into round pedhas or any shapes you prefer. Keep it aside on a plate.
  16. Once the whole mixture is utilized, roll each pedha in castor sugar so that it gets coated from all sides.
  17. Delicious pedhas are ready, serve them and relish eating these pedhas.
