Ingredients Serving: 3

  1. Whole Spices:
  2. Bay Leaf – 1
  3. Black Pepper – 1 tsp
  4. Cloves – 5
  5. Cardamom – 3
  6. Cinnamon 1 small piece
  7. Fennel Seeds – 1 tsp
  8. Cumin Seeds – 1 tsp
  9. Oil – 4 tblspn
  10. Eggs – 3   hard boiled
  11. Basmati Rice – 1 cup cooked
  12. Onion – 1 large sliced thinly
  13. Green Chilli – 2 slit
  14. Ginger Garlic Paste – 1 tblspn
  15. Tomatoes – 1 small sliced thinly
  16. Curd – 1/2 cup
  17. Mint Leaves – 1/4 cup chopped
  18. Coriander leaves – 1/4 cup chopped
  19. Chilli Powder – 2 tsp
  20. Turmeric Powder – 1 tsp
  21. Garam Masala powder – 2 tsp
  22. Lemon Juice to taste
  23. Salt to taste

Instructions

  1. Wash and soak basmati rice for 30 mins. Now Cook rice and set aside. i use 1.5 cup of water for 1 cup of rice.
  2. Heat oil in a kadai, add in boiled egg and fry . Now add in the whole spices and let it sizzle.
  3. Add in onions and chillies and cook till golden. Add in ginger garlic paste and mix well
  4. Add in tomatoes, coriander, mint and curd and mix well. Add in spice powders and salt and mix well. Cook till it thickens
  5. Add in rice and toss well. Now add lemon juice and more coriander leaves.
  6. Serve hot.
