Ingredients Serving: 4

  1. Small Brinjals-10
  2. Tamarind-1 small lemon size diluted in water
  3. Oil-6 tblspn
  4. garlic -10 pods
  5. Onion-1sliced
  6. Curry Leaves-a handful
  7. Mustard seeds / Kaduku-1 tsp
  8. cumin seeds/Jeerakam-1 tsp
  9. jaggery / Sarkarai / Vellam or Sugar-1 tblspn
  10. salt to taste
  11. asafoetida / Kaya Podi / Hing- ¼ tsp
  12. coriander leaves -for garnishing
  13. For roasting and grinding:
  14. Coconut-1 cup
  15. Poppy Seeds -1 tblspn
  16. Pepper-1 tsp
  17. Dry Red chilli-6
  18. Fenugreek seeds - 1 tsp
  19. cumin Seeds-1 tsp
  20. coriander powder -2 tblspn
  21. Onion-1

Instructions

  1. Slit brinjals in the middle in to 4 parts..But make sure that the stem is intact
  2. Heat 1 tsp oil in a kadai and add in all the roasting ingrediants and roast till golden and brown..Let this cool down..Now grind this into a smooth paste and set aside
  3. Heat rest of the oil in a kadai and crackle mustard and cumin seeds..
  4. Now add in asafoetida and curry leaves..Add in onions and garlic and fry for few minutes..
  5. Add in brinjal and fry for 5 minutes till it get seared on all sides..
  6. Pour in the tamarind water and mix well..Add in the ground masala and season with salt and jaggery.
  7. Bring this to a good boil and simmer the flame..Let this cook partially covered for 20-30 mins.
  8. In which time the oil will have been separated from the mixture and the gravy must have thickened
  9. Garnish with coriander leaves and serve with rice..
