ABOUT Kesar Seviyan Kheer/ Vermicelli Milk Pudding RECIPE

Unlike other Indian sweets this sweet dish is prepared quickly and is the easiest to cook. It is known as Payasam in south and Payesh in Bengal and is usually prepared during festivals.

Ingredients Serving: 2

  1. 1 cup broken vermicelli/seviyan
  2. 1 litre milk
  3. 5 tablespoons sugar
  4. 1 tablespoon ghee/unsalted butter
  5. 4-5 green cardamom pods/elaychi
  6. 1 teaspoon saffron/kesar
  7. 5 tablespoon nuts to garnish

Instructions

  1. Take a pan and heat ghee in it, on a slow flame roast the vermicelli till it turns golden brown in colour.
  2. Open the cardamom pods and add into the vermicelli mixture, a beautiful aroma will release once this is done.
  3. Take a heavy bottom kadai/wok and boil in the milk. Once the milk comes to boil, add in a pinch of saffron.
  4. Next add in sugar and the vermicelli mixture into the milk. Let it simmer on a slow flame for 10 minutes until the vermicelli is cooked.
  5. If you prefer thick kheer then let it cook for an additional 5 minutes.
  6. Garnish the kheer with saffron and chopped nuts.
  7. Serve warm or chilled as desired.
