ABOUT Mutton Do Pyaza RECIPE

In this recipe, large amount of onions are used. The onions are added at two stages during cooking, hence the name Do Pyaza (two onions). Do Pyaza is normally prepared using meat like, beef, lamb, chicken, goat etc. But variation can be made by using vegetables instead of meat. In my recipe, I have used Goat meat, which is slow cooked in a saucepan. Remember while preparing any Goat recipe, the meat should be fresh and tender. If you refrigerate raw meat for long time, it becomes more difficult to cook and doesn’t soften too easily. Here the goat meat into small pieces ,washed and kept aside. The more you put onions, better is the taste. Also make sure that the onions are browned properly, before going further.

Ingredients Serving: 4

  1. 1 pound (400 Grams) Mutton/Goat Meat (Cut into small pieces, wash it and keep)
  2. 1 big onion, sliced thin
  3. 1 tablespoon ginger -garlic paste
  4. 1/2 teaspoon turmeric powder
  5. 1/2 cup yogurt/curd
  6. 1 tablespoon hot chilli powder (according to your preference of how spicy you want it)
  7. 1 teaspoon cumin powder
  8. 1 teaspoon coriander powder
  9. 1 tablespoon garam masala
  10. 2-3 green chillies, chopped finely
  11. 2 tablespoons olive oil
  12. Few chopped coriander leaves to garnish
  13. Salt to taste
  14. Lime juice of 1/2 a lime

Instructions

  1. Heat a saucepan on a medium high heat, saute the sliced onions using a tablespoon of oil till its browned. Sprinkle little salt while sauteing as this helps in cooking them faster.
  2. Add ginger-garlic paste. Mix and saute till the raw smell goes away. Then add turmeric powder and mix.
  3. Now, add goat meat and mix well. Add a little water, cover and cook on a medium- high for 30 mins. Check in between, if it requires more water, add little at a time.
  4. Add dry spices like coriander, cumin powder and red chilli powder. Mix it well.
  5. Add the yogurt and sprinkle chopped green chilies. Cover and Cook for another 30 mins on a medium-high heat.
  6. Add garam masala, sprinkle chopped coriander and salt. Mix it well.
  7. In a small pan, heat 1 tablespoon oil and add the dry red chilies. Fry for afew seconds until they brown up. Then add roughly chopped onions. Saute for 2-3 minutes and pour this over mutton. Mix it well, cover and simmer on a low heat for 10 minutes.
  8. Squeeze juice of half a lime.
  9. Enjoy the Mutton Dopiaza with roti, naan or even hot steaming rice.
