ABOUT Mumbai Pav Bhaji RECIPE

Ingredients Serving: 4

  1. 4 Tomatoes pureed
  2. 2 Potatoes(Aloo)
  3. 275 grams bottle gourd (lauki)
  4. 1/2 carrot
  5. 250 grams purple cabbage
  6. 2 small capsicum
  7. 1/3 cup green peas boiled
  8. 1 tbsp ginger grated
  9. 3 tbsp fresh coriander
  10. 2 tbsp lemon juice
  11. 1.5 cups water
  12. 4 tbsp butter
  13. 1 tbsp cooking oil
  14. 1 tsp haldi powder
  15. 2.5 tsp kashmiri mirchi/deggi mirch powder
  16. 3 tbsp pav bhaji masala
  17. 1/4 tsp black salt
  18. Salt to taste

Instructions

  1. Peel the potatoes, bottle gourd and chop them. Grate the carrot. Chop the capsicum, cabbage & cauliflower into small pieces.
  2. Pressure cook all the vegetable (except capsicum) along with 1.5 cups of water for 4-5 whistles. When cool, then mash the vegetables using a potato masher.
  3. Heat oil in a pan, add butter followed by chopped capsicum. Saute on medium heat.
  4. Add grated ginger & tomato puree. Cook on medium heat, covered.
  5. Add 1 tbsp of butter, boiled green peas along with all the dry spices, keep stirring till the oil starts leaving from the sides.
  6. Add in the mashed vegetables & mix it well. Adjust the consistency. Cover & let it simmer on a low heat for 10 minutes.
  7. Roast the pav till its crisp and serve with the hot bhaji.
