Couscous is a super food and very very nutritious.this upma is very very healthy and nutritious and easy to make.lot of vegetables we can add in it and it can be taken in dinner also alongwith soup.

Ingredients Serving: 3

  1. 1/2 cup couscous
  2. 1 tbsp oil
  3. 1/2 cup chop onion
  4. 1/2 cup chop mix bell peppers
  5. 1/2 cup beans,carrot and peas
  6. 1 green chilli
  7. 1 tsp chop ginger
  8. Coriander leaves
  9. Salt as per taste
  10. 1 tsp jeera
  11. 1 tsp mustard seeds
  12. Hing
  13. 1/2 tsp pepper powder
  14. 5-6 curry leaves
  15. 1 tsp urad daal
  16. 1 tbsp lemon juice

Instructions

  1. Heat water in pan and add salt
  2. Boil couscous 10-15 min.
  3. When boil strain it and remove water
  4. Boil peas,carrot and beans
  5. Now heat oil in pan
  6. Add rai , jeera and hing
  7. Add urad daal and roast
  8. Then curry leaves and ginger
  9. Add green chilli and onion
  10. Saute onion
  11. Add all three bell peppers and cook
  12. Now add boiled vegetables
  13. Add salt and pepper
  14. Mix all of them
  15. And squeeze lemon juice
  16. Garnish with coriander leaves
  17. Serve hot
