ABOUT Shahi Chicken Kasundi RECIPE

This recipe is one of my fav. and a must during any in-house party. Here I have made use of kasundi paste along with some dry fruits for a shahi mustardy flavour. I like having it with plain steamed rice. But it also goes well with any Indian bread.

Ingredients Serving: 5

  1. 1 whole chicken, curry cut
  2. 2-3 tbsp. kasundi paste
  3. salt to taste
  4. 1 cup beaten yoghurt
  5. 1 tsp. turmeric powder
  6. 1 tbsp. ginger-garlic paste
  7. 1 tsp. red chili powder
  8. 1 tbsp. coriander-cumin powder
  9. 3 tbsp. mustard oil
  10. 3 onions, chopped
  11. 1-2 green chilies, slit
  12. 2 bay leaves
  13. 1 tsp. whole garam masala (cardamoms, cinnamon & cloves)
  14. 2 tbsp. paste (of almonds, cashews, pistachios & raisins)
  15. 1/2 cup coriander leaves, chopped

Instructions

  1. Marinate the chicken with ginger-garlic paste, salt, yoghurt, turmeric powder, red chili powder, coriander-cumin powder and kasundi for 2-3 hours.
  2. Heat oil in a pan and temper with bay leaves and whole garam masalas. Saute for a few seconds. Add the onion and saute on a medium flame till light brown.
  3. Now add the marinated chicken and continue to simmer, covered till almost dry. Add 1 cup water, slit green chilies and cashew paste. Cook till the gravy is slightly thick.
  4. Adjust water according to the consistency desired. When done and the chicken turns soft, add the coriander leaves and mix well.
  5. Serve hot either with plain Biryani, jeera rice, pulao, tandoori roti, naan or any fried Indian bread.
