ABOUT Zero oil Vegetable Pulao in pressure cooker RECIPE

We sometimes avoid pulao as it contains too much oil/ghee. But this pulao recipe is without any oil/ghee i.e. absolutely zero fat. So it is very healthy and easier to digest. So, anybody can eat it as a one pot meal.

Ingredients Serving: 3

  1. Basmati rice-2 cup
  2. Milk-1.75 cup
  3. Salt to taste
  4. Sugar to taste
  5. Turmeric powder-1 teaspoon
  6. Raisins-4 tbsp
  7. Roasted cashew nuts-4 tbsp
  8. Grated carrot- 1 large
  9. Chopped french beans-1/2 cup
  10. Small cauliflower florets-10-12 numbers
  11. Green chilli (slit)-2-3 pieces
  12. Whole masala,
  13. Green cardamom- 6-8pods
  14. Cinnamon stick- 1-2 medium size
  15. Bay leaves- 2 pieces
  16. Clove- 3-4 pieces
  17. Caraway seeds-1 teaspoon
  18. Mace-2 petals
  19. Nutmeg-1/2 piece
  20. Black peppercorn-8-10 pieces
  21. For garnishing,
  22. Chopped coriander leaves

Instructions

  1. Wash the rice and soak it for 30 minutes in water.
  2. Add 1/4 cup milk in pressure cooker. Let it heat.
  3. Then add all whole spices.
  4. Let it boil.
  5. Add all veggies, green chillis and season with salt, sugar and turmeric powder.
  6. Add raisins and cashew nuts.
  7. Now add rice and saute it in cooker. Within few minutes you can see milk will be dried up.
  8. Then add 1.5 cup milk and 1.25 cup water.
  9. Close the pressure cooker lid.
  10. Cook the pulao for one whistle and let it absorb the steam automatically.
  11. Before serving garnish it with coriander leaves.
