Ingredients Serving: 2

  1. Basmati rice - 1 cup
  2. Cashew nut - 15 piece
  3. Cottage cheese/paneer - 50 gms
  4. Bay leaf - 1
  5. Sliced onion - 1
  6. Ginger garlic paste - 1 tsp
  7. Green chilly - 2
  8. Cumin seeds - 1/4 tsp
  9. Garam masala/hot spices - 1 tsp
  10. Clarified butter - 4 tbsp
  11. Salt - to taste
  12. Corn flour - 1 tsp
  13. Green cardamom - 1 - 2
  14. Cinnamon - 1 inch stick

Instructions

  1. Soak basmati rice for half an hour
  2. Grate the cottage cheese and add salt,hot spices and corn flour and make a small balls.
  3. Heat clarified butter in a pan,
  4. Place cottage cheese ball and deep fry till brown and crispy and keep aside.
  5. Also deep fry the cashew nuts and strain it.
  6. Again heat clarified butter in a same pan.
  7. Add cumin seeds,green cardamom ,bay leaf,cinnamon to crackle.
  8. Add sliced onion and fry till transparent.
  9. Add ginger garlic paste and green chilly and saute for 1 - 2 mins.
  10. Add salt and soaked rice and mix well.
  11. Add two cup of water and some fried cashew nuts.
  12. Cover it and cook in a high flame.
  13. When it boils simmer the flame and cook for five mins.
  14. Garnish with fried cashew nuts and fried cottage cheese balls.
