Ingredients Serving: 4

  1. Potatoes 250 gms
  2. Coriander Leaves 1.5 cups
  3. Mint Leaves 1/2 cup
  4. Ginger 1 inch grated
  5. Green Chilies 3-4 (adjust)
  6. Onion 1 medium, chopped
  7. Cumin Seeds/Jeera 1 tsp
  8. Oil 2-3 tbsp
  9. Salt to taste
  10. Juice of 1 Lemon

Instructions

  1. Pressure cook the potatoes for 1 whistle. Peel the potatoes and cut into quarters. If using baby potatoes, peel and halve or keep it as-is
  2. Blend coriander, mint, green chilies and ginger to a smooth paste.
  3. Hear oil in a pan, splutter jeera. Add onions and saute till onions turn translucent.
  4. Add green paste, and saute for a few seconds.
  5. Add potatoes and salt. Mix well, add few tsp of water if its dry. Add lemon juice and toss well.
  6. Serve immediately as a snack or as a side dish with parathas.
