ABOUT Egg Masala RECIPE

Egg masala one of the easiest and tastiest recipes goes well with indian breads or jeera rice or even plain rice.

Ingredients Serving: 4

  1. Boiled Eggs 4
  2. Tomato 4, roughly chopped
  3. chopped Cashew 2 teaspoon
  4. Onion 1 large,sliced
  5. Cinnamon 1 inch
  6. Bay leaf 1
  7. Cardamom 3-4
  8. 1/2 tsp Peppercorns - adjust
  9. Star anise 2
  10. Turmeric powder 1/2 tsp
  11. Chili powder 1 tsp
  12. Salt to taste
  13. Coriander leaves 3 tbsp chopped
  14. Kasuri methi 1 tsp crushed
  15. 3 tbsp oil

Instructions

  1. Soak cashews in hot water for 10 mins
  2. Grind tomatoes and cashews into smooth puree
  3. Heat oil in a pan, saute bay leaf, cinnamon , cardamom star anise until aromatic. Add onions and saute until browned
  4. Add ground puree and saute until raw taste disappears. Add turmeric powder , chili powder and salt. Mix well for few seconds. Add water as required
  5. Bring to boil, lightly slit eggs and add to gravy. Add crushed kasuri methi and coriander leaves. Mix well. Serve warm

The tomato and onion based gravy is just awesome.
